I love the process of dipping, rolling, baking, shaping, decorating and finally glazing. Simply put, these recipes are created from my ideas, perhaps improvising on an ancient one. For example, our trademark pastry ,Eccles Cakes are a crispy , round puff confection originating in Eccles, England in 1653. They weremade on religious feast days, thus called ‘Church Cakes. The English puritans outlawed Eccles Cakes under Oliver Cromwell’s Protectorate, declaring the Cakes were secretly pagan……just too scrumptious, sensual and appealing to the senses. One could be imprisoned for eating or selling these buttery delights made with sultanas (raisins). Imagine that!
